In a land of vineyards like ours, one might easily believe that the queen is …. drink wine.
Certainly, Corbières wines, Minervois or Cabardès Malepère are widely consumed on carcassonnaises tables, but the city’s emblem drink is not wine, but liquor!
Micheline has a very long history, almost legendary. It is said that a Michelin Boato the 4th century have discovered a miraculous potion, a real elixir of youth! But the secret of production disappears with him.
We find, however, trace the miracle potion in the 9th century, in a shop in the city. This is a herbal liquor called “Micheline” in honor of its inventor.
orkinaLa Micheline falls again into oblivion, until one day in 1856 when during excavations in the Tower of the Inquisition in the city, one falls on parchment delivering the secrets of the master elixir Michelin Boato. It is a tax inspector of the city that creates the Etablissements Sabatier, and began making this rediscovery liquor … miraculously! The recipe is all the rage, and it has no fewer than a dozen distilleries in the late 19th century that produce Micheline. She even declared “Queen of the Spirits” at the Universal Exposition in Paris in 1900! It was “the only one that pleases the palate and fills the mouth with delight!”
The Sabatier Institutions are taken up by the House Cabanel in 1900 and settled in 1904 in Lower Town on Jena Aisles between boulevards and Canal du Midi. Buildings are the Industrial Heritage of the Aude department and are still in the same state for a century. They visit and are a real trip back in time … maybe the first goal Micheline …
You will discover Micheline course, but also the Or-Kina, herbal liqueur and spices that is drunk chilled as an aperitif accompanied by “pebradous” Limoux small pepper biscuits which stimulate the appetite.
